Chicken Caldereta

#Wellnessize a traditional Filipino dish without sacrificing an ounce of flavor by using less fatty chicken instead of pork.

INGREDIENTS

1 whole chicken, cut into servings pieces
1½ cups pineapple juice
1 piece onion, quartered
2 8g MAGGI MAGIC SARAP
½ tsp salt
2 tbsp cooking oil
2 tbsp crushed garlic
1 whole onion, sliced
¼ cup pickle relish
¼ cup liver spread
2 red bell peppers, sliced into strips
1 cup tomato sauce
½ cup grated cheddar cheese
4 potatoes, quarted and fried

PROCEDURE

  1. Combine chicken, pineapple juice, onion, MAGGI MAGIC SARAP and salt in a pot. Cover and bring to a boil. Simmer for 15 minutes or until chicken turns white in color. Remove from heat and let cool. Drain chicken out of the broth and reserve broth for later use.
  2. Heat cooking oil. Sauté garlic and onion until limp. Stir in chicken and cook for 5 minutes. Add pickle relish, liver spread, and bell pepper.
  3. Pour in reserved broth little by little onto the chicken to avoid chicken from drying up.
  4. Add in tomato sauce and simmer uncovered for another 10 minutes. Sprinkle cheese and stir well before removing from heat.
  5. Garnish with fried potatoes on the side when about to serve.
