Chicken Bopis

INGREDIENTS

1 kg chicken heart and gizzard
¼ kg chicken liver
1 liter water
4 lemongrass stalk
2 pandan stalk
1 sachet MAGGI MAGIC SARAP 8g
¼ cup annatto oil
¼ cup sliced ginger
2 tbsp chopped garlic
1 onion, chopped
3-4 pcs bay leaves, crumpled
1 small carrots, minced
¼ kg ground chicken
1/3 cup vinegar
1 cup tomato sauce
Pepper to taste
4-5 pieces siling labuyo, chopped

PROCEDURE

  1. Boil chicken heart, gizzard and liver in water with lemon grass and pandan. Season with MAGGI MAGIC SARAP. When innards are fork tender, remove from the broth and set aside to cool.
  2. When innards are cold enough to handle, chop. Set aside.
  3. Heat annatto oil. Sauté ginger, garlic and onion until fragrant. Add bay leaves.
  4. Stir-in carrots and ground chicken. Stir until chicken change in color.
  5. Pour-in vinegar and bring to a boil without stirring. Add tomato sauce and simmer while occasionally stirring until sauce thickens. Season with pepper and siling labuyo to taste.
